Sweet On You—Seven Layer Bars
Crust
2 sticks unsalted butter2 cup sugar
2 cups all-purpose flour
Topping
4 eggs1 cup sugar
1 cup light brown sugar, firmly packed
1 tsp baking powder
7 oz (2 2/3 cups) shredded sweetened coconut
2 cups (about 8 oz) pecans coarsely chopped
2 cups (12 oz) semisweet chocolate chips
Butter a 10 by 15 by 1 inch pan. Set the rack at the lower third of the oven and preheat to 350 degrees. To make the crust use a rubber spatula to beat the butter in a mixing bowl. Beat in the sugar. Fold in the flour to form a crumbly dough. Pour the dough out into the pan and using the palm of your hand, press the dough out into an even layer over the bottom of the pan. Bake for 15 minutes, until crust begins to color. Remove from the oven and place on a rack while you prepare the topping.
To make the topping, whisk the eggs together, then whisk in the sugar. Whisk in the brown sugar, then the baking powder. Add the coconut, pecans, and chocolate chips and fold them in with a rubber spatula. Spread the topping evenly over the crust with an off-set spatula. Bake the bars for 25-30 minutes, or until the topping is golden. Cool on a rack. Trim 1/8 inch of the edges of the bars and cut into 1 by 2 or 2 by 3 inch rectangles.
Makes about 35 bars.
