Sweet On You—Banana Bran Muffins
Yields 12 standard muffins
1 Large egg ( you can substitute 1/4 cup egg beaters
3/4 Cup packed light brown sugar
1 1/3 Cup mashed ripe, but not blackened, bananas
1/2 Cup raisins, plumped in 1/2 C hot water for 10 mins, then drained
1/3 Cup vegetable or Canola oil
1 Teaspoon vanilla
3/4 Cup all purpose flour
3/4 Cup whole wheat flour
1/2 Cup oat bran (or wheat bran)
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
Preheat oven to 350F.
In a standing mixer, beat the egg and sugar together with a whip attachment until well blended, approximately 5 minutes on medium speed. Beat in the mashed bananas, raisins, oil and vanilla. Let stand a minute.
Sift together the dry ingredients, or mix them together well if you don't have a sifter. Add the banana mixture to the dry ingredients and mix with a wooden spoon until just moistened.
Scoop the muffin batter into standard muffin pans sprayed well with bakers joy or pam for baking and bake until brown and springy to the touch. Turn out onto rack to cool.
